Relocated in 2024 from its original Oxford Street home, this expanded venue integrates seamlessly into the boutique hotel, offering exceptional cuisine and 14 elegantly curated guest rooms. Saint Peter’s core philosophy is rooted in Josh Niland’s pioneering approach to sustainable seafood. Known as the fin-to-scale philosophy, this ethos involves utilising every part of the fish to minimise waste and celebrate its versatility. This dedication to innovation is evident throughout the venue, from the culinary offerings to the design elements. As per their previous venues, including Petermen, Charcoal Fish, and Fish Butchery, the Niland’s, working with Studio Aquilo, have selected NOROCK self-stabilising table bases to complete their restaurant. Our Parkway self-stabilising table bases in an Antique Bronze finish have been chosen to match the high-level customer experience, combining function and style to create an impeccable dining environment.

The restaurant is thoughtfully divided into areas to cater to diverse preferences. Guests can start with the relaxed atmosphere of the front bar, where a menu of nostalgic classics is given a fresh, modern twist. A private dining room offers an exclusive setting for private functions, while the main dining area provides a front-row view of the kitchen’s dynamic energy.

The open kitchen is the heart of Saint Peter’s main dining space, designed for guests to enjoy the culinary process. Chefs, including Josh Niland, prepare dishes over a woodfired grill using carefully selected ingredients. At the chef’s table, a select few diners can indulge in an exclusive 10-course tasting menu while witnessing the meticulous preparation of each dish.

The beverage selection at Saint Peter is equally curated, showcasing a range of Australian wines, spirits, and innovative cocktails. For those seeking something different, the menu also features a curated selection of sake from small, artisan Japanese distilleries, offering a nuanced complement to the seafood-focused cuisine.
